Sautéed Chicken with Spaghetti Squash

Ingredients:

  • Chicken breasts
  • Chicken broth
  • Fresh garlic
  • Italian seasoning
  • Spaghetti squash
  • Green onions
  • Diced tomatoes
  • Minced dried onion
  • Raspberries (for serving)

Instructions:

  1. Begin by sautéing chicken breasts in a pan with chicken broth until they are thoroughly cooked.
  2. Enhance the flavor of the chicken by adding freshly minced garlic and Italian seasoning, cooking until the aroma is released.
  3. For the spaghetti squash: cut it in half, discard the seeds, and place it face down in a microwave-safe glass bowl with about an inch of water. Microwave for 10-12 minutes. Once done, use a fork to scrape out the spaghetti-like strands of the squash.
  4. Serve the spaghetti squash as a base on a plate.
  5. Place the aromatic sautéed chicken on top of the squash.
  6. Add a flavorful garnish of chopped green onions, diced tomatoes, and a sprinkle of dried minced onion for extra crunch and taste.
  7. Complete the meal with a side of fresh raspberries.
